So I have a soup recipe that’s under 100 calories, which I got from Women’s Health magazine. =)
Since I know soup can benefit us, especially when we’re shedding off more of the meat and carbs in our meals.
This is called “Sopa De Calabaza” (Pumpkin Soup, recipe from the co-owner of Kusina Teatro)
Ingredients:
2 tsp. ginger, 2 tbsp white wine, 50g diced onion, 50g diced celery, 1 kilo squash, 80ml water, 1 tsp minced garlic, 600ml chicken stock, 45 ml cream, 1 tsp salt, 80ml yogurt, and chives to garnish for serving.
Procedure:
1.) Steep the ginger in the wine for half an hour.
2.) Roast the onions, celery, squash and garlic in a 375 degrees oven until nicely browned.
3.) Place all the roasted vegetables,water and stock in a saucepan. Simmer until the squash is tender.
4.) Blend the soup with an immersion blender, If you don’t have one, let the unblended soup cool first before putting it in a regular blender. Then, reheat the mixture before proceeding.
5.) Add yogurt and cream until desired thickness is achieved.
6.) Garnish with a bit of yogurt and chives. =)
What I did today:
Packed day! After going to church, we headed to eastwood to try that new korean restaurant and eat there for our mother’s day celebration, but sadly when we got there the waiting list was so long we decided to eat in another restaurant instead. After we walked around the mall then we’re off to my mom’s friend who’s celebrating their golden anniversary (50 years of marriage!). We stayed there for dinner and some karaoke, then I got home at 9pm. I hadn’t done my exercise for the day, but I wasn’t going to miss working out, so I jogged around our compound for 10 rounds. =)
What I ate today:
Breakfast: Cereal with low-fat milk, 1/2 cup black coffee and 1 balut
Snack: 1/2 taco roll
Lunch: Tomato chowder soup, 1/2 burger patty and 2 pc. baked oyster plus 1/4 cup of frozen yogurt for dessert.
Dinner: 1/2 cup palabok, 1/2 tilapia in sweet sauce, 1 slice of beef and 2 spoonfulls of relyenong bangus.
Snack: 3 pc. santol
Elections tomorrow!!!
